Steps to making the perfect cup of coffee

![]() First, fill the group handle just as you see us do every morning. The trick is to ensure the coffee basket is pressed firmly and evenly. You can use a grinder tamp for this – or use your initiative and improvise. |

![]() Next, clean the rim of the coffee basket by brushing your hand lightly over the top. This stops loose coffee from building up on the gasket of your espresso machine. |

![]() Before attaching the filled group handle, flush the group head for 1-2 seconds to remove any left over ground coffee. |

![]() Press the button to extract. Coffee should come out smoothly and evenly and take 25–30 seconds to give 25–30ml of espresso. If your coffee extracts too quickly you may be under dosing or using too coarse a grind of coffee. Too slow an extraction could mean over dosing, over tamping or that the grind is too fine. |

![]() Now for the theatrical part. For silky smooth milk, it’s best to use a middle to full fat product. (Low fat milk froths quicker, so take care to avoid overheating). Pour the right amount of fresh, cold milk into the correct size jug. Turn on the steamer and heat until the milk reaches 60–65ºC and has the right texture. Swirl the jug to stop the milk and foam from separating. |

![]() Excellent work, your coffee is now ready to consume. A well-made coffee should be able to be drunk immediately. It’s also best to use cups that have been pre-warmed. |

![]() If you find espresso a little too intense, don’t be afraid to add some sweetener. Most Italians put sugar in their coffee to balance the flavour, so adding some yourself won’t damage your coffee cred at all. |

![]() A clean coffee machine is an efficient one. Take the time to wipe the steam arm clean after each use.
